Two buildings on a ridge, one with 86 feet of windows facing west. For a photographer that is a promise about the evening, and a reason to plan around sunset.
The Crest Center and the Crest Pavilion sit about four miles from downtown Asheville, and I am an Asheville photographer, so I know the way up. This is how I would plan yours, using what the venue publishes.
The Center is the lodge, with a Main Hall, a lounge with a big stone fireplace and an Overlook Deck. The Pavilion is the glass-enclosed one, with sliding windows, a high ceiling with twinkle lights, and a Pavilion Lawn for ceremonies. Both can host a wedding. Each looks different in a photograph.

West windows and what they do
Floor-to-ceiling windows facing west toward the Blue Ridge skyline mean the room fills with warm, low light in the evening. That is lovely for dinner and toasts. It also means harsh backlight if I stand with the windows behind you, so I place the couple with the glow beside them and let it rim the hair.
The Overlook Deck is the venue's listed ceremony site for the Center. For ceremony photographs, I would watch where the sun sits at your start time and arrange the aisle so the light falls across faces, not into the lens. That is a walk we can do on your tour.
The evening block, and how I would use it
The venue's planning page says weddings usually run a five-hour block. The Center is reserved from 5:00 to 10:00 p.m., the Pavilion from 6:00 to 11:00 p.m. A morning wedding block, 9:00 a.m. to 2:00 p.m., is also offered. In summer, sunset falls inside the evening block. In late fall and winter it falls before, or right at the start.
So I plan portraits first. Family photos and the two of you before guests arrive, while there is still sky. A first look makes this much easier, because the moment you walk into your own party, I am free to give you a quiet sunset walk instead of chasing group shots.

Ceremony in one room, party in the other
The venue's policies allow a ceremony in one building and the reception in the other. The ceremony space is held for two hours of setup, one hour of ceremony, and one hour for photos and breakdown, and guests move to the reception right after the vows. That hour is yours for portraits, so I would make a short list of places in advance.
The Pavilion gives a different mood. Twinkle lights on iron and wood beams, glass all around, and mountain views from the terrace. At night those lights make soft bokeh behind you, so I would save a few frames after dark for the first dance and a quiet minute under the beams.
Seasons, and keeping it small
The venue's notes say a tent rental is required in the Pavilion for plated meals and for events from October through April. Ask which building suits your month and your menu.
The Crest does not publish an elopement package. Ceremony-only weddings and morning weddings are listed, which gives smaller groups room. Ask the sales team what a small day costs and where it would be held.

Questions
Asked and answered
Where is the best light for portraits at The Crest?
I would use the Overlook Deck and the area around the Pavilion's mountain terrace near sunset, with the Blue Ridge to the west. I would scout it with you at your ceremony hour.
Can I bring my own photographer?
The venue does not publish a photographer rule. Its general policies require outside vendors you arrange to be approved by a sales representative, so share your photographer's details with them early.
How much time do we get for photos after the ceremony?
The policies list one hour after the ceremony for photos and breakdown at the ceremony space, with the bridal party leaving the area right after pictures. I would plan portraits to fit inside that hour.
