Biltmore is the grandest backdrop in Asheville, and also one of the more rule-bound. Here is how I would plan a session there, and what to ask before you book anyone.
Biltmore describes the estate as three zones: Biltmore House and Gardens, Antler Hill Village and Winery, and the Deerpark area. For a session that matters, because each zone has its own mood. A Grounds-only ticket covers the gardens and grounds, including Antler Hill Village, but not the house itself.
What I can do is tell you how I would shape the hour, and be straight about the rules, because Biltmore's are specific and they affect who can hold the camera.

Ask first, in writing
Biltmore's policy page lists engagement, maternity, family and similar portraits as personal-use photography. The same page says all commercial uses of photography are prohibited without express written consent. A hired photographer sits right on that line, and I don't want you to find out at the gate.
So my advice is simple. Email Biltmore before you book, tell them who is photographing and what the photos are for, and keep the answer. If you are planning a wedding photo session and your wedding is somewhere else, know that Biltmore says bridal and wedding photography is not allowed unless the wedding is scheduled at Biltmore.
Setups stay minimal: no more than two pieces of equipment, and nothing that needs lighting gear, wardrobe changes or a makeup station in guest areas.
Everyone in the party needs an estate ticket, an Annual Pass, or a stay at an estate lodging property.
Drones are prohibited. Inside Biltmore House there are no tripods and no lenses longer than 135 mm.
Photos taken at Biltmore may not be used to market or advertise a business. That is a fair question for any photographer's portfolio, so I would ask about it too.
Where I would look for light
Biltmore's own photo guide points to a few places I would love to walk through with you: the lawns below the Rampe Douce, where you get the house with the Blue Ridge behind it; the wisteria pergolas near the house in spring; the Bass Pond; and the Italian Garden, whose night-blooming lilies peak early and close by noon. That tells me early in the day is the soft, quiet window.
The same guide mentions fog settling near The Inn in the wee hours of the morning. If you are an early riser, that is the kind of mood I would chase: pale air, long shadows, and nobody else around.

What is blooming when
Biltmore's bloom report gives a clear rhythm, and I would plan around it.
April: tulips and daffodils peak in the beds at the entrance, the Walled Garden and Antler Hill Village. Azaleas begin.
May: mountain laurel and Catawba rhododendron bloom along the Approach Road, and the Rose Garden reaches peak.
June and July: hydrangeas across the gardens, then sunflowers in Antler Hill Village.
Fall: Biltmore publishes a Fall Color Report, and I would check it the week of your session.
Biltmore Village, a simpler option
Biltmore Village is a separate shopping and dining district in Asheville, not part of the estate's ticketed grounds. If the estate's rules feel like too much for an hour of golden light and city sidewalks, this is where I would steer a couple who still want that Biltmore name in the story.
It is public streets, so the City of Asheville's rules apply instead of the estate's. I have not found a village-specific photo rule, so I would confirm with the city if you want anything beyond walking and photographing.

Questions
Asked and answered
Can I bring my own photographer for engagement photos at Biltmore?
Biltmore's policy lists engagement portraits as allowed personal-use photography, and it also bans commercial photography without written permission. A hired photographer falls between the two, so email Biltmore first and get the answer in writing.
Can we take wedding photos at Biltmore if we are not marrying there?
According to Biltmore's policies page, no. Bridal and wedding photography is not allowed unless your wedding is scheduled at Biltmore.
Is Biltmore Village part of the estate?
No. It is a separate district in Asheville with shops and restaurants. The estate's photo policy covers the estate grounds, not the village streets.
